Crispy Roasted Garlic Cheddar Bread Recipe

This roasted cheesy garlic bread is a total chef’s kiss — an easy, affordable snack loaded with flavor and plenty of gooey cheese.

Ingredients You’ll Need

  • Bread – A loaf of Italian bread works best, but a French baguette is a good substitute.
  • Cheese – This is the heart of the recipe. Use good melting cheeses; gouda and mozzarella are my favorites, though any melting cheese will do.
  • Butter – Unsalted butter is used here so you can control the seasoning.
  • Fresh garlic bulbs – For roasting; roasted garlic becomes sweet, buttery, and worth the effort.
  • Spices – Keep it simple: salt and Italian seasoning.
  • Honey (optional) – A touch of honey brightens the butter mix and balances the garlic.
  • Parsley – Chopped parsley for garnish and a fresh finish.

Ingredients 

  • 1 loaf Italian Bread
  • 2 sticks unsalted butter
  • 2 bulbs fresh garlic
  • 1 tbsp parsley
  • 1 teaspoon italian seasoning
  • 1 tablespoon honey
  • 1 cup gouda or cheddar cheese
  • 1 cup mozzarella cheese

Instructions 

  1. Roast the garlic: Preheat oven to 400°F. Slice the top off each garlic bulb, drizzle with olive oil, wrap tightly in foil, and roast for 35–40 minutes until the cloves are golden and soft. Let cool slightly, then squeeze the roasted garlic from the skins.
  2. Make the compound butter: Mash the roasted garlic into the softened unsalted butter, then stir in Italian seasoning, honey (if using), and a pinch of salt. Mix until smooth and well combined.
  3. Prepare the bread: Slice the Italian loaf in half lengthwise. Spread half of the garlic butter on one half and the rest on the other half, making sure the surface is evenly coated.
  4. Add the cheese: Generously layer gouda (or cheddar) and mozzarella over both buttered halves until the bread is fully covered.
  5. Bake and finish: Bake at 375°F for about 15 minutes, or until the cheese is melted. For a bubbly, golden top, broil on low for 1–2 minutes — watch carefully to prevent burning. Garnish with chopped parsley, slice, and serve warm.
