Ingredients

  • 14 tablespoons unsalted butter, room temperature
  • ¾ cup light brown sugar, packed
  • ⅔ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 ¼ cups old-fashioned oats
  • 1 ¼ teaspoons ground cinnamon
  • 1 ¼ teaspoons kosher salt
  • 1 teaspoon baking soda
  • ½ cup sweetened shredded coconut (optional but recommended)
  • ½ cup powdered sugar (for coating)

Instructions

  • Preheat oven to 375°F. Line two baking sheets with parchment paper or silicone mats.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, brown sugar, and granulated sugar.
  • Beat on high until the mixture is light and fluffy, about 3 minutes.
  • Add the eggs and vanilla and mix until fully incorporated, about 1 minute.
  • Add the flour, oats, cinnamon, salt, baking soda, and coconut (if using). Mix until just combined, about 30 seconds.
  • Place the powdered sugar in a small bowl.
  • Scoop golf-ball-sized portions of dough and roll between your palms into smooth balls.
  • Toss each ball in the powdered sugar until fully coated. Arrange cookies 2–3 inches apart on the lined baking sheets.
  • Bake for 9–10 minutes, until golden brown and crackled.
  • Allow cookies to cool completely on the pans.
