I first shared this recipe on Penney Lane where I was a contributor. Buffalo Chicken Sliders are filled with spicy, tender chicken, crisp coleslaw, and cool, creamy blue cheese dressing. Make them in the slow cooker or pressure cooker for an easy weeknight dinner or a crowd-pleasing appetizer!

Slow cookers and pressure cookers are ideal for cooking chicken until it easily shreds. Leave the chicken in the slow cooker for a few hours or in the pressure cooker for about 15 minutes and it will fall apart, making tender, moist shredded chicken. Toss it with your favorite sauce and you have an effortless filling perfect for sandwiches. These Buffalo Chicken Sliders are one of our favorite ways to enjoy shredded chicken — great for dinner or serving at a party.
How to make Slow Cooker Shredded Chicken:
Place raw chicken in the slow cooker insert. Add 1/3 cup water and sprinkle with your preferred seasonings. If you plan to toss the chicken with a flavorful sauce afterward, keep the initial seasoning simple — onion salt works well for a versatile base. Cover and cook on low for about 4 hours. Cooking low and slow produces tender, juicy meat that shreds easily.
How to make Instant Pot Shredded Chicken:
Place the chicken in the bottom of the pressure cooker, add water and seasonings as with the slow cooker method. Cook on high pressure for 10 minutes (allow 5–7 minutes for the pot to reach pressure). After the 10-minute cook time, let the pressure release naturally for 5 minutes, then finish with a quick release. The result is quick, tender shredded chicken.
Shredded chicken can be used in many ways, but one of the simplest and most satisfying is to mix it with sauce and pile it on a bun. For extra texture and brightness, top with coleslaw — it adds crunch and some vegetables too. Because buffalo wing sauce is spicy, I love pairing it with cool, creamy, tangy blue cheese dressing and a sprinkle of blue cheese crumbles. It’s a little messy but absolutely delicious.
Tools used to make these Buffalo Chicken Sliders:
Instant Pot Pressure Cooker – A pressure cooker dramatically reduces cook time compared to a slow cooker. It’s great for soups, rice, and tender meats prepared quickly.
Slow Cooker – A slow cooker is perfect when you have time to let flavors develop slowly. A model with a lockable lid is handy for transporting dishes to parties or potlucks.
