The Perfect Keto Lemon Curd
Ingredients
- 4 Lemons juice and zest
- 1/2 cup Erythritol (or preferred keto sweetener)
- 1/2 cup Butter
- 3 Whole Eggs
- 1 Egg Yolk
Instructions
- Place a medium heatproof bowl over a pan of gently simmering water (bain-marie). Add the lemon juice and zest, erythritol and butter. Ensure the bowl does not touch the pan bottom. Stir until the butter melts.
- Lightly whisk the eggs and egg yolk, then gradually stir them into the heated lemon mixture. Continue stirring and cook for about 10 minutes, until the curd thickens and coats the back of a spoon.
- Remove from the heat, transfer the curd to sterilised jars and refrigerate. Store in the fridge for up to two weeks.
