Peanut Butter Bars are a sweet, chewy oat slice with a smooth peanut butter layer and a peanut butter chocolate ganache on top.
A crunchy, chewy oat base, a creamy peanut butter layer and a glossy peanut butter-chocolate topping — these bars are the ultimate treat for peanut butter lovers.

If you’ve followed this blog for a while you know I love anything peanut butter and chocolate. I’ve shared recipes like Peanut Butter Chocolate Cheesecake, Flourless Peanut Butter Crunch Brownies and Peanut Butter Fudge Rocky Road — and these bars are another simple favourite.


This recipe goes back to basics: a straightforward tray bake made with everyday ingredients. It works perfectly as a snack, a dessert, or a quick something to offer guests — especially during the holidays.

Use smooth peanut butter for the best texture — crunchy versions tend to make the bars dry and crumbly. I prefer all-natural peanut butter for its flavour and less sweetness, but regular peanut butter works well too.

Ingredients
- ¾ Cup Butter (150g)
- 1 and ¼ Cups Peanut Butter (312g)
- 1 Cup Brown Sugar (180g)
- ¼ Cup Sugar (50g)
- 2 Large Eggs
- 1 teaspoon Vanilla Extract
- 2 Cups Old Fashioned Rolled Oats (180g)
- 1 and ¼ Cups All Purpose Flour (150g)
- 1 teaspoon Baking Soda
Chocolate Ganache;
- ⅓ Cup Peanut Butter (90g)
- 1 Cup Dark Chocolate (180g)
Instructions

Preheat the oven to 180°C (350°F). Line a 9″ (23cm) baking pan with baking paper and set aside.

Cream together the butter, brown sugar and sugar until smooth.

Beat in the eggs, vanilla and ¾ of the peanut butter. Mix until combined.

Stir in the oats, flour and baking soda until evenly mixed.

Press the mixture into the prepared pan and bake for 15–20 minutes. The centre may look slightly underdone — it will firm up as it cools.

While the tray is still warm, spread the remaining ¼ cup (≈90g) of peanut butter over the surface.

Allow the base to cool while you make the chocolate ganache.

Melt the peanut butter and dark chocolate together, stirring until smooth. Pour over the cooled bars and spread evenly.

Let the topping set slightly, then slice into 24 pieces and serve.
