HAPPY WEDNESDAY!
Mojitos are one of my favorite summer cocktails. Not only do they taste amazing, they’re also beautiful to serve. When I found this recipe, I fell in love.
This mojito-inspired melon salsa is a refreshing blend of sweet and bright flavors. It combines watermelon, cantaloupe, honeydew, crisp cucumber, fresh mint, lime, cilantro and a touch of red onion for bite. The mix is vibrant, cooling and perfect for summer gatherings. Serve it with your favorite chips—pita chips or lime-flavored tortilla chips are both excellent choices.
Call an impromptu happy hour, invite a few friends, and enjoy this salsa right away.

Mojito Melon Salsa

Ingredients
- 1 cup chopped watermelon
- 1 cup chopped cantaloupe
- 1 cup chopped honeydew
- 1/2 large cucumber, seeded and chopped
- 1/4 red onion, chopped
- 10–12 mint leaves, chopped
- 2 Tbsp chopped cilantro
- 2 limes, juiced
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Combine all ingredients in a bowl. Add lime juice, salt and pepper, then mix gently to combine. Chill briefly if desired, and serve with chips. Enjoy!
