How to make Cherry Cordial Brownies
1. Preheat the oven to 350°F (180°C).
2. In a medium bowl or the bowl of a stand mixer, combine 1/4 cup cocoa, 1/8 teaspoon baking soda, 4 tablespoons melted butter, and 1/8 cup very hot water. Stir until smooth.
3. On low speed, add 2/3 cup sugar, 1 slightly beaten egg, 1/2 teaspoon vanilla, 1/2 cup flour, and 1/8 teaspoon salt. Mix until just combined.
4. Gently fold in 1/3 cup semi-sweet chocolate chips until evenly distributed.
5. Coat a 6 x 6-inch cake pan with non-stick cooking spray. Cut a 6 x 12-inch piece of parchment paper and place it in the pan as a sling so you can lift the brownies out easily once baked.

6. Spray the parchment sling and pan again with non-stick spray. Pour the batter into the prepared pan and spread evenly.
7. Press four chocolate-covered cherry cordials upside down into the batter in a square pattern, spacing them evenly and pressing gently so each rests on the bottom of the pan.

8. Bake for 30–35 minutes, or until the brownies begin to pull away from the sides and a toothpick inserted into the center comes out clean. Allow the brownies to cool completely in the pan on a wire rack before lifting them out with the parchment sling and slicing.
