
I’m back and excited to share a new favorite: cauliflower walnut taco meat. I’m a proud, tired new mom to a beautiful baby girl, and this past five months have been intense, joyful, and full of learning. While I plan to write about my home birth and what I’ve been eating while breastfeeding in a future post, today I wanted to introduce a plant-based, satisfying recipe that’s become a staple in my kitchen.

During the earliest months with my baby I relied on a short list of reliable meals: tempeh tikka masala, simple lentil and rice kitchari, coconut black bean stew, West African peanut stew, and straightforward kale salads. For snacks I loved baking sweet potato oat bran muffins — they are an excellent, nutrient-dense snack for long breastfeeding sessions. As time has settled a bit, I’ve started branching out again and experimenting. This cauliflower walnut taco meat is one of those experiments that quickly became a favorite.

This taco meat is inspired by delicious versions I tried at a local farmer’s market. At home I especially enjoy it in a hearty burrito bowl, but it’s versatile enough for tacos, nachos, or even a plant-based bolognese with a few spice adjustments. It combines the mild nuttiness of walnuts with the texture of finely chopped cauliflower and warm taco spices, giving a satisfying, meaty crumble without any animal products.
I love serving the taco meat in a bowl because it’s balanced and filling. The black bean corn salad pairs perfectly — it’s easy to make and adds bright fresh flavors and protein. A simple lime vinaigrette dresses romaine or other greens and ties the bowl together. If you’re prepping meals for a busy week, make the components ahead and assemble bowls in minutes.

As a new mom, convenience matters. Some days I don’t have the energy to prepare every element from scratch, so I take shortcuts: store-bought salsa, a can of beans, or leftover rice work beautifully with this taco meat. Even with shortcuts the bowl remains nutritious, well-rounded, and delicious. Cauliflower Walnut Taco Meat
You’ll need a food processor to get the best texture for this recipe. If you don’t have one, finely mince the vegetables, cauliflower, and walnuts by hand. Depending on your processor size, you may need to work in batches and combine everything in a bowl before baking or sautéing.
Ingredients
- 1/4 onion, roughly chopped
- 1/2 red bell pepper, roughly chopped
- 1 small cauliflower, florets cut into small pieces (about 4 cups)
- 2 cups raw walnuts
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon oregano (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
- Place the onion and bell pepper in a food processor and pulse until finely chopped.
- Add the cauliflower florets, walnuts, chili powder, cumin, oregano, and salt. Pulse until the mixture forms a coarse crumble resembling ground meat.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for about 45 minutes, stirring once halfway through, until golden and slightly crisp. If you prefer, you can sauté the mixture in a skillet for about 30 minutes, stirring regularly.
- Taste and adjust salt before serving.
Cauliflower Walnut Taco Meat Burrito Bowl
Assemble a nourishing burrito bowl using the taco meat and a few simple, fresh components.
Black Bean Corn Salad
- 1 can black beans, drained and rinsed
- 2 cups frozen or fresh corn, thawed or cooked
- 1 ripe tomato, diced
- 1/4 cup red onion, diced (optional)
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon salt, plus more to taste
- Juice of 1 lime
Combine all ingredients in a bowl and stir well. Adjust seasoning as needed.
Lime Vinaigrette
- 1/4 cup fresh lime juice (about 2 limes)
- 1 tablespoon Dijon mustard
- 2 teaspoons maple syrup or agave
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin powder or seeds
- 1/3 cup neutral oil (such as grapeseed, or your preferred oil)
Place all vinaigrette ingredients in a jar, tighten the lid, and shake until emulsified. Toss with romaine or other greens for the bowl.
Assemble the Bowl
- 1 cup cauliflower walnut taco meat
- 1 cup black bean corn salad
- 1/2 cup cooked rice (or rice and quinoa mix)
- 2 cups romaine lettuce tossed with lime vinaigrette
- 1/2 avocado, sliced
Layer all components in a bowl and serve. This makes a satisfying, balanced meal that stores well for meal prep and reheats nicely for busy days.
