Homemade Paleo Chicken Bouillon Recipe – Whole30 Sugar-Free

Every great meal begins with a flavorful base. This homemade paleo “chicken” bouillon delivers deep savory flavor with no odd additives, making it suitable for Whole30, Paleo, Keto, and vegan diets.

I’ve been making this blend for years, originally to flavor my Paleo Ramen Zoodles in a Jar. Over time I tweaked the ingredients and proportions to boost the depth and complexity. It’s excellent for soups, stews, gravies, and as a seasoning for pressure-canned chicken.

Homemade Bouillon Ingredients

  • Nutritional Yeast – provides a savory, slightly cheesy backbone that helps mimic the bouillon flavor.
  • Kosher Salt – I prefer kosher salt, but sea salt works well too. Avoid table salt; its fine crystals can be less noticeable in this mix.
  • Ground Turmeric
  • Dried Thyme
  • Dried Rubbed Sage – a small amount adds a warm, classic note.
  • Dried Oregano
  • Dried Basil
  • Dried Minced Onion
  • Ground Ginger
  • Umami Powder – optional but recommended if you want an extra layer of depth. Available premade or you can make your own.

This overview lists the components used to make the bouillon. Exact measurements and full instructions follow in the recipe card below.
