Greek Tzatziki Chicken

Ingredients
- ⅓ cup kalamata olives, sliced
- 1 tbs minced garlic
- ¾ cup Greek plain yogurt
- 2 tbs lemon juice
- ½ cup feta cheese crumbles
- 1 ½ cups shredded rotisserie chicken
- ½ tbs dill
- ½ tbs parsley
- 1 tsp salt
- ½ tsp pepper
- 1 cup cherry tomatoes, sliced
- ½ red onion, sliced
- ½ cucumber, diced
- 4-6 pitas for serving
Instructions

In a large bowl, combine the yogurt, lemon juice, minced garlic, dill, parsley, salt and pepper. Stir until smooth.

Add the shredded rotisserie chicken, feta, kalamata olives, diced cucumber, sliced cherry tomatoes and red onion. Mix gently to coat everything in the tzatziki-style dressing.

Cover and refrigerate for at least one hour to let the flavors meld.

Serve the mixture in warm pitas or over a bed of greens. Enjoy immediately.
