This Healthy BBQ Slow Cooker Meatballs recipe is one of my favorite “cheat” dinners.

After watching shows about traditional Italian cooking and testing recipes in my own kitchen, I found most classics land in two extremes: incredibly simple or extremely time-consuming. Dishes like lasagna, bolognese, and meatballs often feel like they require an entire afternoon. While there are good reasons for that depth of flavor, there’s also room for a practical, delicious shortcut that saves time without sacrificing taste.

This recipe embraces a little culinary cheating: we sear the meatballs under the broiler to get a charred edge, then let the slow cooker do the rest. Broiling gives a barbecue-like crust and helps render fat, while slow cooking lets the sauce reduce and develop rich flavor with minimal hands-on time.

The method is straightforward: sear the tops of the meatballs briefly, nestle them into a well-spiced tomato sauce, and let them cook slowly until tender. No need to babysit a simmering pot for hours — drop everything into the slow cooker and come back when it’s ready. This makes the recipe ideal for beginners and perfect for a healthy family dinner.

Using the broiler to seal the meatballs mimics the caramelized edges of a barbecue, and slow cooking finishes them gently while concentrating the sauce. The result is a tender, flavorful meatball with a smoky-sweet tomato sauce.

How to make these Slow Cooker Meatballs

Step 1 – In a small bowl, combine almond flour with ½ tsp salt, garlic powder, oregano, coriander, and a pinch of cinnamon if you like a warm note.

Step 2 & 3 – In a large bowl, add the ground beef and sprinkle evenly with the remaining salt. Add the egg, Dijon mustard, and the spiced almond flour. Gently mix with your hands until the mixture just binds—avoid overworking the meat to keep the meatballs tender.

Step 4 & 5 – Line a large baking sheet with parchment and preheat your broiler. Form the mixture into 18–20 meatballs (about 1.5 oz / 45–50 g each) and arrange them so they don’t touch.

Step 6 – Broil for 3–4 minutes to lightly brown the tops and render some fat, which helps prevent an overly greasy sauce. Remove from the oven.

Easy Version

Step 7 & 8 – Stir the sauce ingredients together and pour the mixture into the slow cooker. Nestle the broiled meatballs into the sauce, pressing them in gently without breaking them.

Step 9 – Cover and cook on low for 3.5 to 4 hours, until the meatballs are cooked through and the sauce has reduced. Serve garnished with fresh herbs.

Advanced version — For Instant Pot or slow cookers with a sear option

  1. Melt 1 tbsp olive oil over medium heat and sauté the chopped onion for about 4 minutes. Add minced garlic and cook until fragrant.
  2. Add smoked paprika, chipotle or ancho chili powder, ground cumin, and coriander; sauté briefly. Stir in tomato paste and cook a minute before adding tomato puree and the rest of the sauce ingredients.
  3. Add the broiled meatballs and continue cooking according to the appliance instructions, or set the slow cooker to low and proceed as above.

Tips

  • Storage: Leftover meatballs keep in the fridge for up to 4 days or in the freezer for about a month.
  • Even sizing: Roll meatballs to an even size so they cook uniformly. Mine were 45–50 g (1.5–1.8 oz) each. Use one as a reference on a scale when shaping the rest.
  • Meat options: You can substitute pork, chicken, or ground turkey for beef if preferred.
  • Seasoning swap: Coconut aminos can be substituted with light soy sauce if desired.

  • ¼ cup almond flour (25 g)
  • 1 tsp salt
  • 2 tsp garlic powder
  • 2 tsp oregano
  • ¼ tsp coriander (optional)
  • ⅛ tsp cinnamon (optional but recommended)
  • 1 egg
  • 2 tsp Dijon mustard

Sauce

  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 ½ tsp chipotle or ancho chili powder
  • ½ tsp ground cumin
  • ½ tsp ground coriander (optional)
  • 2 cans tomato sauce (28 fl oz each)
  • ¾ tsp salt, more to taste
  • 2–3 tbsp maple syrup
  • 2 tsp apple cider vinegar
  • 1 tbsp coconut aminos
  • 1 tsp liquid smoke

Instructions
