I’m back from the Philippines and energized from the trip, eager to share some of the delicious food I enjoyed and learned to make. One of my favorites is the classic buko shake — a young coconut milkshake that’s rich, creamy, and full of tropical flavor.
Even during the rainy season, the weather in the Philippines felt hot and humid. To escape the heat, I’d often spend afternoons in SM Supermall, wandering the food court with a supersized coconut milkshake from an unassuming stall. It was an inexpensive, simple pleasure that made the day more enjoyable.

I had a wonderful month visiting family and eating great food, but after a long spell in the tropical heat I looked forward to cooler weather. Back home in Southern California, however, the temperatures rose into the 90s, so I started making buko shakes at home to recreate that tropical, cooling experience.

Making buko shake is quick and rewarding. With young coconut meat, coconut water, evaporated milk, and a simple syrup, you get a silky, coconut-forward shake that’s ideal for beating warm weather. I began preparing it regularly — it’s that satisfying.
Helpful tips
- Use simple syrup instead of adding granulated sugar directly to the cold ingredients. Sugar doesn’t dissolve easily in cold liquids and can settle at the bottom. Make a syrup by dissolving equal parts sugar and water over heat, then cool it before mixing.
- For a healthier sweetener, substitute honey or monk fruit sweetener for the simple syrup.
- Evaporated milk gives the shake a rich, creamy texture. If you prefer, use fresh milk or a non-dairy alternative like almond or soy milk.

Buko Shake
Ingredients
- ½ cup water
- ½ cup sugar
- 2 cups young coconut meat
- 1 cup coconut juice
- ½ cup evaporated milk

Instructions
