The soup is intended to be on the thinner side; if you prefer a heartier bowl, stir in pasta or rice near the end. For us, the balance of tomatoes, cream, cheese, and spinach was just right.

Start by heating a large soup pot over medium and adding the olive oil. Once hot, add one large diced onion with kosher salt, black pepper, and crushed red pepper flakes. Sauté for 4–5 minutes, stirring occasionally, until the onion is softened.

Add 6–8 cloves of minced garlic and 1 pound of ground Italian sausage, then cook 6–7 minutes, breaking the sausage up with a spatula until browned.

Pour in crushed tomatoes, chicken broth, Italian seasoning, and chicken base if using. Season with additional kosher salt, black pepper, and crushed red pepper flakes to taste. Bring to a boil, then reduce to a simmer and cook about 10 minutes so the flavors meld.

Stir in 1 1/2 cups heavy whipping cream and simmer another 10 minutes. The cream will reduce slightly and give the soup a silkier texture.

Finally, add a 10 oz bag of baby spinach and 1 cup each of shredded Parmesan and shredded mozzarella. The spinach will wilt down dramatically and the cheeses will melt into the broth, enriching the flavor and texture. Simmer about 10 more minutes, taste, and adjust seasoning as needed.
