Whipped Goat Cheese and Blackberry Crostini Recipe

I made these Whipped Goat Cheese Blackberry Crostini recently and was delighted by how tasty they turned out. With fewer than five main ingredients, they’ve become my favorite easy appetizer to serve when the weather warms up.

I could happily make a whole meal out of crostini. They’re my go-to for entertaining because they’re versatile, satisfying, and easy to customize for any season.

These crostini are bright and fresh — served cold or at room temperature, they let seasonal produce shine. Here, juicy blackberries add a beautiful pop of color and bright, tart flavor.

The blackberries are the star: their deep purple stands out against the whipped goat cheese and fresh mint, giving each bite a springtime feeling. But don’t underestimate the goat cheese — it’s the real hero that ties everything together.

Goat cheese is naturally tangy and creamy, and when you whip it with a little cream it becomes light and spreadable — perfect for crostini. Just a tablespoon of whipping cream or a splash of milk transforms the texture into something airy and elegant.

In a rush? No food processor?

If you prefer, you can skip whipping the cheese — it only takes a few minutes but the crostini will still taste great. Use a spoon or small spatula to soften and spread the cheese if needed.

Baking Your Crostini

Toasted bread is the foundation of any good crostini. Properly baked slices provide crunch and structure so the toppings don’t make the bread soggy.

☑️ Use a fresh baguette about 3″ wide or narrower for the best bite-sized pieces.

☑️ Slice the baguette about ½” thick — thin enough to be elegant, thick enough to stay crisp.

☑️ Brush each slice lightly with olive oil and season with salt and pepper; garlic is optional if you want more flavor.

☑️ Toast until golden brown and crisp, not burnt. A little extra toasting helps keep the bread crunchy under moist toppings.

Serving Tips

Nobody wants dry, stale, or soggy crostini. For the best texture, toast the bread no more than a few hours before serving. Keep the slices crisp — when you add the whipped goat cheese and blackberries, the bread should remain crunchy underneath.

Ingredients

  

  • 4 oz plain goat cheese
  • 1 tablespoon whipping cream
  • 10 large mint leaves
  • 3-4 oz fresh blackberries

Method

  1. Preheat the oven to 375°F (190°C).
  2. Slice the baguette into ½-inch pieces and arrange them on a baking sheet. Brush each slice lightly with olive oil and season with salt and pepper.

  3. Bake 8–10 minutes, or until the slices are golden and crisp. Allow to cool slightly.
  4. In a bowl, combine the goat cheese and whipping cream (or a splash of milk). Whip with a hand mixer or pulse in a food processor until smooth and fluffy.

  5. Spread a generous layer of whipped goat cheese on each crostini. Top with fresh blackberries, pressing them lightly into the cheese.
  6. Finish with a drizzle of honey and a sprinkle of chopped mint or thyme if you like. Serve immediately and enjoy.

Notes
