Spicy Buffalo Chicken Burger Recipe with Tangy Blue Cheese Slaw

Buffalo Chicken Burgers — juicy patties blended with buffalo sauce, topped with melted cheddar and a cool ranch slaw for a perfect balance of heat and creaminess. An easy weeknight dinner that tastes like game day without the fryer.

Buffalo chicken is always a crowd-pleaser, especially when it’s warm, saucy, and stacked on a bun.

Buffalo Chicken Burger with chips

I came up with these burgers on a weekend when we wanted wings but didn’t feel like frying or using every pan in the kitchen. They deliver the same tangy, spicy buffalo flavor in a fast, weeknight-friendly format.

The buffalo sauce in the mix keeps the chicken moist, the ranch coleslaw cools the heat, and the cheddar melts over the patty for a rich finish.

Why You’ll Love These Burgers

  • Bold Buffalo Flavor — Buffalo sauce is mixed into the patties so every bite has heat and tang.
  • Juicy, Not Dry — The sauce and breadcrumbs help keep ground chicken tender.
  • Simple Prep — No complicated chopping: mix, shape, cook, and assemble.

  • Ground chicken
  • Buffalo sauce
  • Garlic powder
  • Onion powder
  • Breadcrumbs
  • Coleslaw mix
  • Prepared ranch dressing
  • Hamburger buns
  • Cheddar cheese slices

How To Make Buffalo Chicken Burgers

  1. Combine the burger ingredients — In a large bowl, gently mix ground chicken, buffalo sauce, garlic powder, onion powder, and breadcrumbs until evenly combined. Avoid overworking the meat.
  2. Form and chill patties — Shape the mixture into four equal patties and refrigerate until ready to cook; chilling helps them hold together.
  3. Make the ranch coleslaw — Toss coleslaw mix with ranch dressing until coated. Adjust dressing for desired creaminess and chill until assembly.
  4. Cook the patties — Preheat a grill or skillet to high. Cook the patties about 6 minutes per side, or until fully cooked and nicely browned.
  5. Melt the cheese — Place a slice of cheddar on each patty during the last minute of cooking so it melts over the burger.
  6. Assemble — Place each cheesy patty on a toasted bun and top with a generous scoop of ranch coleslaw. Add extra buffalo sauce if you like more heat.
  7. Serve — Plate with your favorite sides and enjoy immediately.

Recipe Tips & Suggestions

  • Chill the patties: Refrigerating helps them stay intact while cooking.
  • Adjust heat: Buffalo sauce varies — pick a brand that matches your preferred spice level.
  • Grill or skillet: If you don’t have a grill, a hot cast-iron skillet gives a great sear.
  • Toast the buns: Lightly toasting adds texture and prevents sogginess.
  • Try different cheeses: Pepper jack, blue cheese crumbles, or mozzarella are tasty alternatives.
  • Make extra slaw: Double the coleslaw for an easy side salad and extra topping.
