Day 3 of Cookiemas 2025 features Vaniljekranse, the classic Danish butter cookies—just like the ones you find in the tins.

I followed the recipe from Nordic Food & Living, swapping a vanilla bean for a vanilla bean paste I had on hand. The result was delicious and very close to the traditional tin cookies. Piping the dough by hand is a bit tiring, so plan for some elbow work!

To begin, I creamed the butter and sugar together, then added the vanilla and the egg until smooth.

Next I added the dry ingredients and mixed until the dough was fully combined and smooth.
