Caramel Apple Brie

This week has been a whirlwind. I celebrated my birthday yesterday and also had a walkthrough on my new home. I’ve decided to treat myself early — this house will be my gift for future birthdays and holidays. The closing keeps getting pushed by inspection delays, which is frustrating, but the finish line feels very near.

Even with the delays, I’m excited about moving in. I found myself searching for front-porch benches, only to remember I already own two iron chairs and a table that are perfect for the spot. Re-discovering my things and opening boxes will feel like Christmas. I don’t plan big parties this year, but once I’m settled, you can bet I’ll host an open house to celebrate.

Earlier this week I shared a straightforward stuffed mushroom recipe, and today I’m offering another appetizer that fits the “quick and easy” theme. Caramelized Apple and Toasted Walnut Brie requires just a few ingredients and comes together fast — the perfect recipe for busy hosts or last-minute entertaining.

This dish features warm Brie topped with apples sautéed in butter and brown sugar, then finished with toasted walnuts. Serve it with crisp crackers or sliced baguette for a simple, elegant presentation. At my last gathering, it disappeared quickly — guests practically fought over the last bite.

Choosing the right apple is important. Red Delicious may look pretty, but they’re often too soft for cooking. Granny Smiths are tart and hold up well in long cooking, but they aren’t always my favorite. For this recipe, try Honeycrisp, Fuji, Braeburn, Jonagold, Pippin, Pink Lady, Jonathan, or Cameo. These varieties are crisp enough for caramelizing, taste great raw, and work well with the sweetness from the butter and sugar.

This appetizer can be prepared quickly and served immediately or chilled and brought back to room temperature before serving. It’s also easy to make a few hours ahead if you prefer to prepare in advance. Pair it with an assortment of crackers and bread slices for an attractive platter everyone will enjoy.
